Year 2 - Day 226 - August 15

When we started getting eggplant in our crop share a couple weeks ago, naturally my first thought was not a positive one. Mike on the other hand was thrilled. His grandmother used to make fried eggplant and he was the only one that would eat it with her. He found a recipe online for the last eggplant and liked it so much that he re-did it with this week's share. That's a lot of fried vegetables on that plate!
